It was in 1851 that John Murray Gibbons first developed the recipe, together with his original aging
process, that resulted in what is known today as "Granville Cellar Aged Cheddar".
In those days, the means to ship perishable products around the country were limited and the fame of Granville Cheese was
generally confined to New England.
Today the original recipe and aging method are unchanged, but now you can enjoy the exceptional flavor and texture of our
unique cheddar wherever you live.
As you complete the order form please take into account that our "Medium"Cheddar is similar in strength to other cheddars
labeled "Extra Sharp". Our "Sharp" and "Extra Sharp" are proportionately stronger.
Our cheddar is best served at room temperature. If refrigerated please set out for three hours so that the wonderful taste returns. The cheese is cellar aged and is never refrigerated until taken home. I never know three hours before that I am going to want cheese so I personally wrap the cheese in saran wrap to keep it from drying out and put it in the microwave so that the dog does not steal it. The cheese has already been unrefrigerated for four to eighteen months and I promise that it wont last that long once you get it home so no need to worry about spoilage.
